Number refers either to a "big number" in the Schirmer score, as in No. 2. Note other scores, such as the Dover orchestral score, use a different convention for the big numbers. Page numbers are also from Schirmer. Where necessary system and measures within the system will be indicated (e.g., 42/1/3 means page. 42, 1st system, 3rd measure).
The Who column lists choruses singing during the excerpt. For each excerpt there are typically several files: one where all parts are equally loud and additional files for the different vocal parts where a single part is somewhat louder than the others.

If you choose to download the files, you can tell what you've got by looking carefully at the name. Everything before the underscore(_) tells you what part of the score it's from. Designations after the underscore tell you voice part. If there is no underscore, all voices are equally prominent. Otherwise the featured voice will be louder, but all other parts are still audible. Here are some examples:
DutchmanA1-2.MID is Act I, No. 2 (Schirmer), all voice
parts equally prominent.
DutchmanA1-2_NT.MID is Act I, No. 2, Norwegian sailors (i.e.,
on-stage chorus) tenor most prominent.
DutchmanA3-13_DB2.MID is Act III, No. 13, Dutchman's crew
(off-stage chorus) bass 2 most prominent.
DutchmanA3-13-P2_NB1.MID is Act III, No. 13, part 2, Norwegian
bass 1 most prominent.
The midi files can help with pitches, rhythms (to a degree; only the conductor can determine how a ritard. will be handled or how much time to give a fermata) and with an overall sense of where an individual line fits in. The basic tempi used in the midi files shouldn't be too far off from the performance tempi but they're very unlikely to be right on. Be ready to sing at whatever tempo the conductor chooses.
The table below has links to mp3 files of diction coach Lea Frey reading all the text chorus sings. In some cases (e.g., Act II file) there is some extra text at the end. The file for pp. 185-201 is missing a little text.
